!!! This may be my favorite food thread yet. I eat coconut in almost every form I can find: coconut flour, coconut milk, coconut butter, coconut flakes. It finds my way into rice dishes, salads, muffins, pudding, and coffee. I am particularly stoked to try out some of those coconut soups and salads, like 27, 28, 39, and 40!
Pavlovas are my new favorite baking treat. But I haven’t tried them with any coconut flavor yet, which now seems pretty much blasphemy as it’s one of my favorite flavorings! To the kitchen immediately!
You definitely have to try a coconut one immediately! I find the coconut can be overpowering if you’re used to more neutrally flavoured pavlova bases, but it can also be delicious.

Indeed we have.
I love love love coconut. It’s right up there with lemon as my favorite thing to use in sweet and savory cooking. I like to put tons of coconut in my homemade granola. I’m definitely going to make some of these recipes! Especially all the coconut cakes and pies, mmmmmm.

As soon as the oven in my apartment gets replaced, I am making those coconut brown butter cookies!
Wait… Did I miss the memo in macaroons like I missed the memo that this article was published?! Oh but I wish I had the coconut cake recipe my future mother in law makes to share with you guys. I’m a connoisseur of coconut cake but hers is number one.
Those raw vegan coconut lemon bars are about to f*ck me up.
