Happy Hanukkah! When I was a kid the best part about Hanukkah was eating latkes. Then when I got older it was cool to play with fire and light the menorah, but latkes are so much more satisfying. Anyways, The Kitchn has posted a recipe for apple and cheese stuffed latkes which looks so good that I had to share it with you. As soon as I have some free time I am making these and eating them all.

Emily Choo started as an intern with Autostraddle when she was 18 years old. She's now 10 years older and lives in Toronto with her partner and cat. The defining moment of her career was when Riese said this about her: " I think Emily Choo is a very bright, 'poetically inclined' girl who pays attention to everything and knows almost everything (the point of stuff, how to read, how beautiful things feel, how scary things feel, etc.) but doesn't believe/accept/realize yet that she knows almost everything." She still doesn't believe she knows anything, so, thank you, Riese, for that.
Emily has written 100 articles for us.
Mind=blown. Totally making these ASAP. Also, try putting Old Bay seasoning on latkes…incredible.
I latke this post a lot.
My partner found this recipe today and is making it for me for dinner as I am 1/2 Jewish – LOL! She knows this time is really hard for me as this is only my 2nd Hanukkah without my grandfather (he passed away in 2009) so she decided to try and make my day better by treating me to my favorite Hanukkah treat!! I’m really excited for dinner! LOL!
This weekend, the roommate and I are totally making those latkes and these: http://www.flickr.com/photos/gkamin/327177788/
And then, we die. Of joy. And full.
oh my god
OH MY GOD YOU GUYS
i’m making these for dinner
and dinner hasn’t happened yet
but i accidentally ate one
and it is literally the best thing that has been in my mouth, like, ever
also: moar cheese than you think you need
THERE IS NOTHING THAT ISN’T IMPROVED BY CHEESE
I need latkes and sufganiyot in my belly RIGHT NOW.
I’ve never had latkes I don’t think, but I’ve just decided that I need some right away. Have you heard about the guy who ate (mostly) nothing but potatoes from October 1st to November 29th? Do you think I could survive on latkes alone?
I don’t know, but I would totally be willing to try with you. I’d probably make sure they’re the apple- and cheese-stuffed latkes to be safe, because, you know, nutrition.
