Every summer I overdose on zucchini. Zucchini seems like one of those veggies that matures all at once for everyone ever. One moment you’re craving it, the next you’re drowning in it. It seems like every neighbor and family member in my life gives me grocery bags full of it, as if I’m not getting a ton from my CSA or on epic sale from the farmer’s market.

Then, when fall comes around, it’s like everyone suddenly only remembers how to make zucchini bread. Don’t get me wrong, I love zucchini bread. But how many loaves is too many loaves? Did you know you can eat zucchini in non-bread form? Zucchini is surprisingly versatile and its light taste makes it easy to sneak into other foods, even desserts.

  1. I’m gonna pass some of these along to my mom. She grows zucchini in her garden, and she waits so long to pick them that they end up being like 3x as long as a football and almost as thick. She could definitely use these recipes.

  2. This is going to be SO USEFUL in a few months when my CSA has a zucchini explosion. Also, zucchini, summer squash, and eggplant are not my favorite vegetables, but I ate 4 helpings of this and wanted more.

  3. Zucchini might be my favorite vegetable. When I was a kid, my mom would sauté zucchini in garlic and olive oil- simple and delicious.

    The word zucchini is really fun to say and spell.

    I only discovered zucchini bread recently, so I have yet to tire of it. That being said, these recipes look DELICIOUS, and I shall be attempting many of them in the near future. Thanks!

    • So I recommend putting that sauteed zucchini in a tortilla wit ha little parmesan cheese and then eating only that for a week

  6. When my parent’s garden is taken over by giant monstrous zucchini I make zucchini chocolate cake with chocolate frosting. One of my favorite summer things.

    My grandpa has apparently won a “fake apple pie” contest several times with his zucchini pie, but I’ve never had a chance to try it.
